What Pad Kratiem means
ผัดกระเทียม is commonly written Pad Kratiem or Pad Gratiem. Pad refers to stir-frying and kratiem means garlic. Add prik Thai, พริกไทย, and the name specifies pepper. Gai is chicken and moo is pork. E1 E2 T1
Peppercorns and chilli are separate seasonings. The chicken below uses white and black pepper without chilli. Pholfoodmafia puts black pepper and fresh chilli together in a scallop version, so it is worth checking the dish rather than inferring the heat from its name. E1 T2
The recipes illustrate several ways to make it. They do not establish a single inventor or date. For a different Thai stir-fry, Pad Kra Pao centres on holy basil, while Pad Khing gives sliced ginger the main role.

Choosing the garlic, pepper and sauces
Start with fresh garlic and cut it evenly. The small pieces turn golden quickly, especially once the water has bubbled out. Keep a strainer ready and save a little of the finished garlic for the plate. E1
| Ingredient | What it does | Practical choice |
|---|---|---|
| Garlic | Flavours the oil and gives the topping its crunch. | Chop evenly and fry gently. |
| White and black pepper | Season the chicken with peppercorn warmth. | The recipe uses both. Use a recipe written for one pepper if that is the flavour you want. |
| Coriander | Fresh stems in the chicken recipe. Roots in some pounded pastes. | Chop the stems before you heat the pan. |
| Oyster sauce | Adds savoury depth. | Conventional oyster sauce contains molluscs. Vegan alternatives have their own labels. |
| Soy and seasoning sauces | Supply salt, flavour and, in dark soy, colour. | Check the actual labels for soya, wheat and any other ingredients you need to avoid. |
| Fish sauce | Adds salty, fermented flavour to the chicken. | Contains fish. Choose an animal-free formulation for vegan cooking. |
A pounded mixture of garlic, peppercorns and coriander root is often called sam kloe, สามเกลอ. Pholfoodmafia uses that idea in its pork preparation. Pranee Halvorsen describes it as a basic seasoning paste. The chicken recipe below gets its garlic flavour from frying the chopped cloves separately. T1 T3 E5 E1
Thai garlic and pepper chicken for 3 to 4
Adapted from Pailin Chongchitnant’s Hot Thai Kitchen recipe. The serving range is from her recipe. Use a small pan, a heatproof strainer and bowl, a wok or large frying pan, a board, measuring spoons and a clean food thermometer. E1
Ingredients
- 500 g chicken breast or thigh, sliced about 1 cm thick
- 8 garlic cloves, chopped
- 1 tbsp conventional oyster sauce
- 1 tbsp soy sauce and 1 tsp Golden Mountain seasoning sauce. Use 1 tsp more regular soy sauce in place of the Golden Mountain sauce if needed.
- 1 tsp fish sauce
- ¼ tsp ground white pepper and ¼ tsp ground black pepper
- 1½ tsp sugar
- 7 to 8 coriander stems, chopped
- Neutral frying oil, enough to just cover the chopped garlic in a small pan
- Up to about 1 tsp black soy sauce for colour and a little water, both optional
- Cooked jasmine rice, to serve
Use a 15 ml tablespoon and a 5 ml teaspoon.
Method
- Season the chicken. Toss it with the oyster sauce, regular soy, seasoning sauce, fish sauce and both peppers. Set it aside in the fridge while you prepare the garlic.
- Fry the garlic gently. Put it into a small pan and cover it with a shallow layer of oil. Heat gently until small bubbles surround it. When it turns golden and the bubbling subsides, strain it into a heatproof vessel, keeping the oil and fried garlic separately.
- Stir-fry the chicken. Heat about 2 tbsp of the garlic oil in a wok or roomy frying pan. Toss about another tablespoon of the oil through the seasoned chicken, then add the chicken and sugar to the hot pan. Stir until cooked through. Add a splash of water if it catches. Add a little black soy only if you want a darker colour.
- Check and finish. Probe the centre of a thick piece of chicken with a clean thermometer. One Food Standards Agency combination is 75°C held for 30 seconds. Stir half the garlic and the chopped coriander stems through the cooked chicken, then take the pan off the heat. U1
- Serve while the topping is crisp. Spoon over jasmine rice and scatter the remaining garlic just before eating.
Refrigerating the chicken while you work and adding a probe check are practical food-safety additions. Keep raw chicken and its utensils away from cooked food. This home recipe uses fish, soya and molluscs. Check the sauces for wheat and other allergens on their current labels. U1 U4
Other versions worth trying
Pholfoodmafia’s pork collar uses pounded garlic, coriander root and white pepper with oyster sauce and other seasoning. It fries some garlic separately and serves the pork over rice with cucumber and a fried duck egg. Use that recipe for its own quantities. T1
Real Thai Recipes adds garlic to the pan first, then cooks the chicken and seasons it with fish sauce, sugar and pepper. It also describes a tofu version. If making a vegan adaptation, check the entire seasoning and preparation. Simply Suwanee’s pork recipe uses its own marinade and is another way to use fried garlic. E2 E4
For comparison, the black pepper chicken recipe from The Woks of Life adds vegetables and a cornflour slurry to produce a thicker sauce. Pailin’s version uses garlic oil and a lighter coating without that slurry. These are examples of different recipes rather than fixed rules about all Thai or Chinese cooking. E6 E1

2. What does Pad Kratiem mean?
3. Is Pad Kra Tiem the same spelling as Pad Kratiem?
4. What is Gai Pad Kratiem?
5. Is Pad Kratiem the same as Pad Kra Pao?
They are separate stir-fries. Garlic and pepper give Pad Kratiem its character, while holy basil is central to Pad Kra Pao. At Charm Thai Cafe the Pad Kra Pao base contains gluten. E1 T1
Flavour, heat and texture
7. What does Pad Kratiem taste like?
8. Is Pad Kratiem spicy?
9. Which is better, white or black pepper?
10. Does it have to be dry?
11. Is crispy garlic essential?
Garlic, pepper and sauces
13. Which garlic should I buy?
Fresh firm cloves work for the main recipe. Use the clove count as a starting point because bulbs vary in size. Chop evenly so small pieces do not burn while larger pieces are still pale. E1
14. Can I use jarred garlic?
Use fresh garlic for the fried topping if you want crisp pieces. Jarred garlic may contain extra liquid and will behave differently in hot oil. A recipe designed for fresh cloves is the better starting point. E1
15. What is sam kloe?
16. Does Pad Kratiem always contain fish sauce?
17. What is the dark soy sauce for?
In the main chicken recipe, the optional black soy sauce deepens the colour. You can leave it out. Light soy and dark or sweet soy have different flavours, so check the label before substituting. E1
Shopping and preparation
19. What cut of chicken works best?
20. Can I use coriander stems instead of roots?
21. What can I use instead of Golden Mountain sauce?
22. How do I choose a frying oil?
Use a neutral oil suitable for frying. The main recipe uses the oil first for garlic and then for the chicken. Prepare a heatproof strainer and bowl before cooking so you can lift out the garlic promptly. E1
23. Can I skip the marinade?
Cooking technique
25. How do I fry garlic without burning it?
Let the oil bubble gently around the chopped garlic. Watch the colour and strain it when golden. A dark batch can taste bitter, so keep the heat low enough to give yourself time to lift it out. E1
26. Why fry the garlic separately?
27. Can I use a frying pan instead of a wok?
Yes. Use a roomy frying pan suited to your hob. Cook in batches if the chicken covers the pan too densely to turn comfortably. E3
28. When do I add the fried garlic back?
29. How do I know the chicken is cooked safely?
Use a clean probe in the centre of a thick piece. One Food Standards Agency combination is 75°C for 30 seconds. Check the meat itself rather than judging it by the colour of the garlic or sauce. U1
Proteins and variations
31. Can I make Pad Kratiem with pork?
32. Can I use beef?
Thin slices of a quick-cooking cut suit a stir-fry. Choose a recipe for that cut, since braising beef and sliced steak behave differently. Charm Thai Cafe's menu offers beef among its stir-fry protein choices. E2
33. Can I make a prawn version?
34. Can seafood versions use black pepper?
Yes. Pholfoodmafia's scallop recipe uses black pepper, fried garlic and fresh chilli. It is a separate recipe that also uses butter and Chinese cooking wine. T2
35. Does tofu work in Pad Kratiem?
Firm tofu holds together when turned in the pan. Real Thai Recipes browns the tofu before making its garlic stir-fry. If cooking vegan, replace any fish or oyster sauce and check the other seasonings too. E2
Dietary requests and allergens
37. Is Pad Kratiem vegan?
It can be made vegan with an appropriate protein and animal-free seasonings. The main chicken recipe uses fish sauce and oyster sauce. Charm Thai Cafe lists a separately prepared vegan version. E1
38. Can Pad Kratiem be gluten-free?
Check every sauce and seasoning. Soy and other bottled sauces can contain wheat. Charm Thai Cafe lists a gluten-free preparation on request. Discuss the complete dish and shared kitchen before ordering. U4
39. Which allergens are in the home recipe?
40. Is oyster sauce suitable for a shellfish allergy?
Conventional oyster sauce contains oyster, a mollusc. If you have an allergy, say which shellfish you need to avoid and ask about the sauce and shared handling. A mushroom-based alternative needs its own label check. U4
41. Can I order it with a nut allergy?
Tell the restaurant about the allergy before ordering. Check sauces, garnishes, oil and handling. Charm Thai Cafe prepares dishes in a shared kitchen that handles nuts and other allergens, so freedom from cross-contact cannot be guaranteed.
42. Is Pad Kratiem halal at Charm Thai Cafe?
Halal chicken and beef are available. Check the sauces and preparation with the team. Pork is also served, so the restaurant is not wholly halal.
Serving and comparisons
43. What should I serve with Pad Kratiem?
44. Can I serve it with a fried egg?
45. How does it compare with Chinese-style black pepper chicken?
46. How is Pad Kratiem different from Pad Khing?
Garlic and pepper lead here. Fresh ginger strips are the point of Pad Khing. Both are stir-fries, but each has its own aromatic base and sauce choices.
47. Is it the same as oyster sauce stir-fry?
No. Some versions include oyster sauce, but garlic and pepper set this dish apart. Compare the restaurant's oyster sauce stir-fry if you prefer a milder choice. E1
48. Can I serve it as a dish to share?
Yes. Real Thai Recipes serves garlic and pepper chicken either over rice as a one-dish meal or on a separate plate for sharing. Check dietary requirements for the whole meal. E2
Troubleshooting
49. Why has my fried garlic gone bitter?
The pieces may have browned too far. Chop evenly, use a gentle heat and strain at golden. Start again with fresh garlic if the first batch has scorched. E1
50. Why did my crispy topping soften?
51. Why is there water in the pan?
52. What if the sauce tastes too salty?
Reduce the seasoning in the next batch or serve it with plain rice. For the current batch, adding suitable unsalted ingredients can spread the seasoning across more food. Sugar changes the balance but does not remove salt.
53. Why is the chicken dry?
54. Why is the garlic flavour weaker than expected?
Start with fresh garlic and keep some fried pieces for the end. If you strain off all the garlic oil and use plain oil for the chicken, you lose some of the aroma the recipe is designed to carry through. E1
Nutrition, leftovers and ordering
55. How many calories are in Pad Kratiem?
There is no single figure. The protein, amount of oil, serving size and sides all matter. A recipe's nutrition estimate does not describe the restaurant serving.
56. How should I chill the leftover stir-fry?
57. Can I freeze leftover Pad Kratiem?
If the ingredients are suitable for freezing, cool promptly, portion and freeze. Defrost in the fridge and use within 24 hours of full defrosting. Add a fresh topping at serving if you want crisp garlic. U2
58. How do I reheat the stir-fry?
59. Does the same storage rule apply to jasmine rice?
No. Cool cooked rice quickly, ideally within one hour, and refrigerate for no more than 24 hours before reheating. Reheat only once and until steaming hot throughout. Ask about takeaway rice before reheating it. U3
60. How do I order Pad Kratiem at Charm Thai Cafe?
Find Garlic & Black Pepper Stir Fry on the stir-fry menu. Choose your protein, say which dietary preparation you need, and mention any allergy separately. Use the menu for current prices.
