Khao Pad is Thailand's everyday wok-fried rice - jasmine rice tossed hot and fast with egg, onion and your choice of protein, finished with a wedge of lime on the side. It's simple by design, and simple dishes are usually the clearest measure of a kitchen's wok work.

At Charm Thai Cafe on Copley Road, each portion is cooked to order under Rin's direction. Our house-special version, Thai Special Fried Rice (Khao Pad Ruam), combines chicken, pork and prawn together with egg and fresh vegetables - our most popular fried rice by some distance. Single-protein versions and a lighter egg-only side are also available.
