Thai curry is one of those dishes that's easy to get wrong - and most Thai restaurants in the UK do. At Charm Thai Cafe in Doncaster, we serve all six classic Thai curries: green, red, yellow, massaman, panang and jungle. Each one is finished in the wok per order by Rin, our Head Chef with over 10 years of Thai cooking experience across South Yorkshire. If a curry isn't what you're after, her signature dark noodle soup is the other dish regulars come back for.

Our curry pastes are imported directly from Thailand - the same brands used in Bangkok kitchens. That's where the depth comes from. We don't try to make our own pastes from scratch, because honestly, the imported Thai ones are better than anything we could produce here. What we DO control: the coconut milk balance, the fresh aromatics, the protein, and the way it all comes together in the wok. All six curries are naturally gluten free when ordered with our GF soy sauce swap.

Each curry has its own paste, its own balance of heat, and its own personality. Here's what makes each one different.

Green Curry

แกงเขียวหวาน · Gaeng Kiew Wan

The classic, made with green chilli paste, coconut milk, bamboo shoots, courgette and lime leaves. Aromatic and balanced - the curry most people start with, and the one they often come back to.

The mildest of the curries, made with yellow curry paste, coconut milk, onion and potato. Influenced by Indian curry traditions but distinctly Thai. Great for kids and spice-cautious diners.

Thicker and creamier than red or green curry, made with panang paste, coconut milk, lime leaves and ground peanuts. Less broth, more sauce - rich, nutty, and properly satisfying.

Jungle Curry

The wild one. Bold, aromatic, properly hot - made without coconut milk, which is what sets it apart from every other Thai curry on the menu. It comes from rural northern Thailand where coconuts don't grow. Pure broth, fresh vegetables, lots of herbs. The curry for people who want the real heat.

We don't pretend to make them from scratch here, because the authentic Thai pastes are better than anything we could produce. Thai Curry Questions

What is the difference between green, red and yellow Thai curry?
Green curry uses fresh green chillies for a herbal, fragrant heat. Red curry uses dried red chillies - deeper and slightly more earthy. Yellow curry contains turmeric and dried spices, giving it a milder, warmer flavour closer to South Asian curries. All three use coconut milk. Jungle curry is the one without coconut milk if you want a thinner, hotter curry.
How spicy are Thai curries?
It varies. Yellow curry is the mildest - warm rather than hot, closer to South Asian curries. Green and red sit in the middle with a clean herbal heat. Panang is rich and only mildly spiced. Massaman is the gentlest of the lot - sweet, nutty, almost no heat. Jungle curry is the hottest by a clear margin. The chilli ratings on our menu show the traditional Thai heat - we dial it back by default so everyone can enjoy it. Just ask for the full kick if you want it as it's cooked in Thailand.
Are your curry pastes made in-house?
No - we use imported authentic Thai pastes shipped direct from Thailand, the same ones used in Bangkok kitchens. Clean ingredient lists - chillies, lemongrass, galangal, kaffir lime, garlic, shrimp paste, salt and spices, no thickeners or modified starches. Rin tastes and balances each curry in the wok as it cooks.
Can I have a curry without coconut milk?
Yes - the jungle curry is coconut-free by default, built around fresh herbs, chilli and the clear broth style of central and northern Thailand. It is hotter than the coconut curries because the heat is not softened by coconut. The other five curries (green, red, yellow, panang, massaman) all use coconut milk.
