The Pork
Belly pork cooked in fresh, dedicated oil. No flour coating, no batter - just clean, rendered fat and crispy skin. Naturally gluten free in this preparation.
The Sauce
Oyster sauce, fish sauce, garlic, chilli and holy basil. Wok-fired at high heat so the basil wilts into the sauce and everything gets a proper char.
