White fish blended smooth with red curry paste, fish sauce and kaffir lime. The paste binds together into a firm, shapeable texture that holds its form when fried.
The Green Beans
Finely sliced green beans folded through the paste before shaping. They stay slightly firm after frying and give the fish cake its characteristic cross-section texture.
