What Thai Satay Tastes Like

The satay skewers have a slightly charred, caramelised exterior from the grill with the spiced marinade working into the meat. The Homemade Peanut Sauce

The peanut sauce at Charm Thai Cafe is one of a small number of sauces Rin makes entirely from scratch. It uses ground peanuts, coconut milk, Thai spices and a balance of sweet, salty and spiced flavours built in the kitchen rather than opened from a packet.

Most Thai restaurants outside Thailand use a pre-made satay sauce base. The result is recognisable but flat. A scratch-made peanut sauce has texture, depth and a freshness that holds up through the meal. It's worth ordering the satay at Charm Thai Cafe for the sauce alone.

Ground Peanuts

Real peanuts worked into the sauce base give it texture and depth. The consistency is thick enough to coat the skewer without pooling at the bottom of the dish.

Coconut Milk

Full-fat coconut milk gives the sauce body and a gentle sweetness that balances the savoury peanut base and the warmth of the chilli.

Thai Spice Balance

Lemongrass, galangal and a careful balance of fish sauce and palm sugar give the peanut sauce its distinctly Thai character - different from Malaysian or Indonesian versions.
