Tom Yum is one of the defining dishes of Thai cooking - a clear, sour and spicy soup built entirely on fresh aromatics rather than a paste or coconut milk base. Lemongrass, galangal and kaffir lime leaves go into the broth first; fresh chilli and lime juice finish it. The result is clean, sharp and fragrant in a way that coconut-based Thai dishes simply are not.

At Charm Thai Cafe in Doncaster, Rin builds Tom Yum per bowl from fresh aromatics. The lemongrass and galangal go in whole - bruised, not blended - and the fresh chilli is added to order so the heat level can be adjusted. What Goes Into Tom Yum

Tom Yum has no paste, no coconut milk and no thickener. Everything in the broth is a whole ingredient that you can see and smell. The flavour is built on three pillars: the grassy freshness of lemongrass, the earthy warmth of galangal, and the citrus perfume of kaffir lime. Fresh chilli and lime juice finish it.

What is Tom Yum soup?

It is one of the most recognised Thai dishes outside Thailand and one of the few where the broth itself is the star.
Is Tom Yum the same as Tom Kha?
No - they share aromatics like lemongrass and galangal but Tom Kha uses coconut milk to create a creamy, milder broth. Tom Yum stays clear and sour, with a sharper heat from fresh chilli. Tom Yum has more punch; Tom Kha has more richness. Both are popular in Thailand.
Is Tom Yum soup vegan or vegetarian?
Traditional Tom Yum uses fish sauce and often prawns, so it is not vegan or vegetarian by default. At Charm Thai Cafe we can adjust for vegetarian or vegan requirements - ask when you order. The aromatic base itself (lemongrass, galangal, kaffir lime, chilli) is plant-based.
How hot is Tom Yum?
Tom Yum has a clean, direct heat from fresh chilli - different from the gradual warmth of curry. Because there is no coconut milk to soften it, the heat lands more immediately. We calibrate to a medium level by default; mention when you order if you'd like it hotter or milder.
