What Makes Rin's Green Curry Different
Thai green curry is one of the most recognisable dishes in Thai cooking - and one of the easiest to get wrong. At Charm Thai Cafe in Doncaster, Rin uses authentic Thai green curry paste imported directly from Thailand - the same paste used in Bangkok kitchens - and finishes every curry in the wok per order.
The paste goes into hot oil first to bloom the aromatics, then coconut milk is added gradually to build the broth. Kaffir lime leaves, Thai basil and vegetables cook through in the sauce. Rin tastes and adjusts the balance as it cooks. No shortcuts, no pre-mixed batches sitting in a pot. If you're looking for authentic Thai food in Doncaster, the green curry is a good place to start.

What Green Curry Tastes Like

Green Curry
Herbal, fragrant coconut broth. Fresh green chilli heat with lemongrass and kaffir lime running through it.
Red Curry
Deeper and earthier than green, with dried red chilli. Full coconut milk body, slightly more robust flavour.
Yellow Curry
The mildest of the three chilli-based curries. Turmeric and dried spices give it a warmer, gentler character.
Panang Curry
Rich and thick, with ground peanuts in the paste. Lower coconut milk ratio means a more intense, dry-style sauce.
Massaman Curry
The gentlest curry on the menu. Sweet, nutty, almost no heat - influenced by Persian and Indian spice routes.
Jungle Curry
No coconut milk - the only one on our menu without it. Hot, clear broth with fresh herbs. The boldest on the menu.
