1. What We Serve

Three noodle soups, one kitchen

Noodle soup is one of those dishes that tells you a lot about a Thai kitchen. The broth gives the cook nowhere to hide. At Charm Thai Cafe on Copley Road, a few minutes from the Wool Market, three noodle soups are on the menu year-round: the dark noodle soup, the light noodle soup, and Thai instant noodles in light broth.

The dark noodle soup is Rin's signature - a deeper, richer bowl built from soy, palm sugar, star anise and layered aromatics. It's the dish she's refined over 10+ years of Thai cooking across South Yorkshire and the one regulars most often come back for.

The light noodle soup is the cleaner option: a clear, balanced broth that lets the noodles, herbs and protein speak without the weight of the dark bowl.

The Thai instant noodles in light broth are everyday comfort food in Thailand - served at home, at street stalls, at neighbourhood noodle shops. We serve them the way they're actually made: proper broth, fresh herbs, your choice of protein.

2. The Broth

Rin's broth, prepped daily

Good Thai noodle soup lives or dies on the broth. Rin builds the bases each day on authentic Thai foundations sourced direct from Thailand - the same pantry ingredients Thai cooks use across Bangkok kitchens - and develops the broth from there with aromatics that release slowly: garlic, white pepper, coriander root, star anise and soy where the bowl calls for it. The light broth keeps the seasoning gentle and the colour clear. The dark broth runs deeper, with more soy, more weight on the spoon and a slow build of palm sugar and aromatics.

Once the base is ready, each bowl is finished individually when the order comes in. Noodles drop into hot water for seconds, not minutes. Proteins are added depending on what you've ordered. The broth goes over last, with a final taste and adjust at the wok station. Rin tastes and adjusts as she cooks - that's the whole job.

This is why five tables matters. There's room to cook each bowl properly rather than pull it out of a holding pot. The flavour profile sits where it should: deep when it needs to be, clean when it needs to be, balanced either way.

Dark vs light: which to order

Both broths start from the same kitchen principle - good foundations, fresh aromatics, balance - but they end up in very different places.

🌑 Dark Noodle Soup

Rin's signature. Draws on the spirit of Thai boat noodle soup - built with dark soy, palm sugar, star anise, garlic and white pepper. Rich, savoury and slightly sweet, with a quiet aniseed warmth and a thickness on the spoon that's unusual in UK Thai kitchens. The one to order if you like bold, layered flavour - or if you've eaten boat noodles in Thailand and missed them. Beef is the traditional pairing; all proteins are available.

☀️ Light Noodle Soup

The cleaner, fresher option. A clear broth, mildly seasoned, built to highlight the noodles and toppings. Coriander, spring onion and white pepper finish each bowl. Lighter on the palate but no less considered. The one to order if you want comfort without weight, or if you're sharing a table with someone who's going for a heavier curry. Good for first-time Thai noodle soup diners too.

4. Thai Instant Noodles

This is the bowl that surprises people most. In the UK, instant noodles suggest a shortcut. In Thailand, they're beloved everyday food - eaten at home, at street stalls, at late-night noodle shops. Proper restaurants serve them. There's no shame attached.

We serve Thai instant noodles in our light broth, finished with chopped spring onion, fresh herbs, garlic and white pepper. You choose your protein from the full range: chicken, beef, pork, prawn, tofu or veg. The instant noodles bring their own character - bouncier than rice noodles, with a distinctive seasoning that Thai diners grow up with - and the light broth carries them properly.

If you've travelled in Thailand you'll recognise this bowl. If you haven't, treat it as your way in: quick, comforting, generous, and a more honest picture of what Thai people actually eat day to day than most things on UK Thai menus.

5. Options

Spice, proteins, vegan and gluten free

Proteins. All six options are available across the noodle soup menu: chicken, beef, pork, prawn, tofu and veg. Pork is on the menu but is not halal. Chicken and beef are halal.

Noodles. Two rice noodle options for the dark and light noodle soups: sen yai, the wide flat rice noodle, and sen lek, the thinner rice noodle. Both are gluten free. Sen yai gives you a bigger, chewier mouthful that holds onto the broth; sen lek is lighter and more delicate. The Thai instant noodles bowl uses wheat-based noodles.

Spice. Tell us what you want and Rin will cook to that. Mild, medium, hot, or Thai-hot if you mean it. The chilli goes in at the finishing stage so it's straightforward to dial up or down.

Vegan. The tofu or veg versions of dark and light noodle soup can be made vegan on request - fish sauce and animal-based seasonings left out. Tell us when you order. More on our vegan Thai menu.

Gluten free. The rice noodle versions of dark and light noodle soup can be cooked gluten free using sen yai or sen lek with GF soy. We use a dedicated gluten free kitchen for these orders. The Thai instant noodles bowl is wheat-based and is not gluten free.
