What is Pad See Ew?
Pad See Ew is one of Thailand's most popular everyday noodle dishes - and one of the least known outside the country. The name means 'stir-fried with soy sauce', which tells you most of what you need to know: wide flat rice noodles, dark soy, egg and a proper hit of wok char. Deeper and more savoury than Pad Thai, with a slight smokiness that only comes from a very hot wok.

What Makes It Work
The Wok Char
Pad See Ew depends on heat in a way that most dishes do not. The wide noodles need a very hot wok to get colour and char without turning soggy. The dark soy sauce caramelises slightly against the hot surface. The egg sets fast and gets worked through in seconds. This is cooking that cannot be rushed, pre-made or reheated - it only works per order, in a wok that is properly hot.
