The Difference

Our House Pad Thai Tamarind Sauce

Much of the character of Pad Thai comes from the balance of its sauce. At Charm Thai Cafe, Rin and her team prepare the house tamarind sauce for service, ready for the kitchen team to use throughout the day.

During cooking, the kitchen team balances the prepared sauce for each order, combining tamarind, palm sugar, soy and fish sauce with the noodles. The commercial five-ring wok range allows several dishes to be cooked efficiently during service. Crushed peanuts are added when the dish is finished.

The noodles are Tiger Tiger rice noodles, naturally gluten free. Thin, 5mm flat noodles that hold the sauce without turning soggy. Egg, bean sprouts and spring onion round out the dish.

Dietary Options: Gluten-Free, Vegan, and Halal Pad Thai

Gluten free. The rice noodles are Tiger Tiger gluten free noodles, and the sauce base of tamarind and palm sugar is naturally gluten free. Standard soy sauce is brewed with wheat, so mention gluten free when you order and Rin swaps it for gluten free soy. Starters elsewhere on the menu use wheat wrappers, but the Pad Thai itself just needs that one swap.

Vegan. Vegan Pad Thai omits the egg entirely rather than substituting it, and the tamarind sauce is naturally vegan once fish sauce is swapped for soy. Choose tofu or extra vegetables as your protein and you get the same rice noodles, bean sprouts and crushed peanuts as every other version.

Halal. Chicken and beef Pad Thai are both available with halal meat on request. Pork Pad Thai stays on the menu too, so that version is not halal, and we don't offer halal lamb. We're an honest independent kitchen rather than a certified halal restaurant - just tell our team when you order and the kitchen will prepare the dish with the requested halal protein under Rin's direction.

What is the difference between Pad Thai and Pad See Eew?
Both are stir-fried noodle dishes but they are quite different. Pad Thai uses thin rice noodles in a tamarind-based sauce that is tangy and slightly sweet. Pad See Eew uses wider flat rice noodles in a darker soy-based sauce with a little wok char. Pad Thai is the better-known dish internationally, while Pad See Eew has a deeper savoury flavour.
Is Pad Thai spicy?
Pad Thai is usually mild rather than hot. At Charm Thai Cafe it is a good choice if you prefer less chilli, and you can use the traditional condiments served with it to adjust the heat to your own taste. If you want extra chilli, just ask when ordering.
