A Proper Range

Thai Noodles Done Properly

Thai noodle cooking is broader than most British menus suggest. There's the stir-fried side - Pad Thai, Pad See Eew, Pad Kee Mao - and then the soup side, which is where Rin's signature dark noodle soup lives. At Charm Thai Cafe in Doncaster, we serve the full range, each cooked to order in the wok.

Rin has spent 10 years cooking Thai food across South Yorkshire, and her noodle dishes are where her experience shows. Different noodles for different dishes, the right sauce for each, every plate finished individually. If you're after authentic Thai food in Doncaster, the noodle section of the menu is where to start.

Tell Them Apart

The Three Stir-Fried Noodles

People often ask which one to choose. They look similar on a menu but they're cooked completely differently. Here's a quick guide.

Pad Thai

Thin · 5mm · Mild

Tamarind, fish sauce, palm sugar, lime. Sweet, sour, slightly salty. Topped with crushed peanuts and a wedge of lime. The most internationally famous Thai dish - and the easiest place to start if you're new to Thai food.

Pad See Eew

Wide · 10mm · Mild-medium

Dark soy, light soy, garlic, egg, Chinese broccoli. The wok char on the wide noodles is what makes this dish - it's slightly sweet, slightly savoury, deeply comforting. Arguably more popular in Thailand than Pad Thai is.

Pad Kee Mao

Wide · 10mm · Spicy

Same wide noodles, completely different sauce. Chilli, garlic, fish sauce, Thai basil. Punchy, fragrant, hot. Pad Kee Mao means Drunken Noodles - traditionally the dish you'd order after a few too many to wake your taste buds up.

The Soup Side

Thai Noodle Soups

Where Rin's experience really shows. Three different noodle soups, each with its own broth and character. Built per bowl with fresh ingredients.

🌑

Dark Noodle Soup

Rin's signature. Rich, deeply flavoured dark broth with rice noodles, herbs and your choice of meat. Unlike anything else in South Yorkshire.

from £13.50

☀️

Light Noodle Soup

A clearer, more delicate broth - aromatic, comforting, gentler on the palate. Good for spice-cautious diners.

from £13.50

🍲

Tom Yum Noodle Soup

The hot and sour classic, served with noodles. Lemongrass, galangal, lime leaf and chilli - bright and punchy.

from £14.00

🥣

Laad Naah

Wide rice noodles topped with a thick savoury gravy and Chinese broccoli. Comfort food in a bowl.

from £13.50

Common Questions

Thai Noodle Questions

What types of Thai noodle dishes do you serve?
We serve the full range of Thai noodle dishes. Stir-fried noodles include Pad Thai (thin rice noodles in tamarind sauce), Pad See Eew (wide rice noodles in dark soy), and Pad Kee Mao or Drunken Noodles (wide noodles with chilli and Thai basil). On the noodle soup side we serve Dark Noodle Soup, Light Noodle Soup, Tom Yum noodle soup and Laad Naah (wide noodles in a thick gravy). Each comes with your choice of chicken, prawn, beef, pork, tofu or vegetables.
What is the difference between Pad Thai, Pad See Eew and Pad Kee Mao?
All three are stir-fried Thai noodle dishes but they're quite different. Pad Thai uses thin 5mm rice noodles with a tangy tamarind-based sauce, egg and bean sprouts - the mildest of the three. Pad See Eew uses 10mm wide rice noodles with dark soy, garlic and Chinese broccoli - savoury and slightly sweet with a charred wok flavour. Pad Kee Mao (Drunken Noodles) uses the same wide noodles but with chilli, Thai basil and a punchier garlic-soy sauce - the spiciest of the three.
Are your Thai noodle dishes gluten free?
Many of our noodle dishes can be made gluten free on request. Pad Thai is the easiest - we use Tiger Tiger rice noodles, gluten free soy sauce and our scratch-made Pad Thai sauce. Pad See Eew and Pad Kee Mao can be adapted using gluten free soy and oyster sauce. Our dark and light noodle soup bases contain gluten and are not suitable for a gluten free diet. Just let us know when you order and we'll guide you to the right options.
