The Three Stir-Fried Noodles
People often ask which one to choose. They look similar on a menu but they're cooked completely differently. Here's a quick guide.
Pad Thai
Tamarind, fish sauce, palm sugar, lime. Sweet, sour, slightly salty. Topped with crushed peanuts and a wedge of lime. The most internationally famous Thai dish - and the easiest place to start if you're new to Thai food.
Pad See Eew
Dark soy, light soy, garlic, egg, Chinese broccoli. The wok char on the wide noodles is what makes this dish - it's slightly sweet, slightly savoury, deeply comforting. Arguably more popular in Thailand than Pad Thai is.
Pad Kee Mao
Same wide noodles, completely different sauce. Chilli, garlic, fish sauce, Thai basil. Punchy, fragrant, hot. Pad Kee Mao means Drunken Noodles - traditionally the dish you'd order after a few too many to wake your taste buds up.
