How Our Pad Thai Sauce Is Prepared
The balance of the sauce is central to a good Pad Thai. Rin and her team prepare the house tamarind sauce for service so the kitchen can work consistently and efficiently across dine-in, takeaway and delivery orders.
During cooking, the kitchen team balances the prepared sauce for each order with tamarind, palm sugar, soy and fish sauce, then tosses it through the noodles. The commercial five-ring wok range allows several dishes to be cooked efficiently during busy service. Crushed peanuts are added when the dish is finished.
The noodles themselves are Tiger Tiger rice noodles - naturally gluten free. Thin, 5mm flat noodles that hold the sauce without turning soggy. Egg, bean sprouts and spring onion round out the dish.
