She has cooked Thai food professionally across South Yorkshire for more than 10 years, including at Thai Garden Cafe in Manvers, briefly at Khao Niew in Barnsley, and now at Charm Thai Cafe in Doncaster town centre. Her experience shapes the preparation, seasoning and cooking methods used across the menu, including during busy services.
In practice, dishes are checked and adjusted as they cook. A Tom Yum broth that needs another squeeze of lime gets it before the bowl leaves the kitchen. A Pad Kra Pao that needs more heat gets more chilli in the pan rather than a sauce poured over the top afterwards. The kitchen follows Rin's methods so cooked-to-order standards remain consistent across dine-in, collection and delivery orders.

The working rhythm is simple. Sauces are made fresh each morning, ready for lunch and the evening, then finished per order once you have chosen. Pad Thai sauce is prepared for service, then balanced during cooking for each order with tamarind, palm sugar, fish sauce and lime rather than poured from a bottle. Satay sauce is made in-house. We are equally straight about what we bring in. The curry pastes are imported from Thailand, the same Mae Ploy pastes used in Bangkok kitchens, made with chillies, lemongrass, galangal, kaffir lime, garlic, shrimp paste and spices. Importing them is not a shortcut. It is how you get a base flavour that tastes like Thailand rather than an approximation of it. What the kitchen does with those pastes in the wok is where the cooking happens. Our starters, including the spring rolls, dumplings, fish cakes and moneybags, are handmade in-house and cooked per order.

Spice can be set exactly where you want it on each dish, because the heat is judged for each order rather than fixed in advance. A table of four can have the same green curry at four different heat levels without anybody compromising. The vegan range runs right across the menu, from the curries with tofu or vegetables through to a vegan Pad Thai with the egg left out entirely. Halal chicken and beef are on the menu by design, so there is proper choice for halal diners, and pork dishes are clearly separate.
