Thailand's Richest Curry
What is Panang Curry?
Panang is one of the six Thai curries on the menu at Charm Thai Cafe in Doncaster, and the one that tends to surprise people who expect it to taste like green or red curry. The paste has ground peanuts blended into it, which gives the sauce a nuttier, thicker quality. Less coconut milk is used than in other curries, so the sauce concentrates and coats the protein more heavily. Kaffir lime leaves are torn in as it finishes.
Rin uses an authentic Panang paste imported from Thailand - the same paste used in Bangkok kitchens - and balances the sauce in the wok per order. The heat is mild and the richness is the point. Panang

Herbal and fragrant with a fresh chilli heat. A step up in heat from Panang - lighter broth, more punch.
Red Curry
Deeper and earthier than green. Dried red chilli gives it more warmth and a slightly more robust character.
Jungle Curry
No coconut milk - the only one without it. Hot, clear broth with fresh herbs. The boldest by a clear margin.
