What Makes Rin's Red Curry Different
Thai red curry is one of the cornerstones of Thai cooking - and one of the dishes most easily done badly outside Thailand. The difference comes down to the paste. At Charm Thai Cafe in Doncaster, Rin uses authentic Thai red curry paste imported directly from Thailand - the same paste used in Bangkok kitchens - not a diluted supermarket version.
The paste goes into hot oil to bloom the dried red chilli and aromatics, then full-fat coconut milk is added to build the broth. Bamboo shoots and fragrant herbs cook through in the sauce. What Red Curry Tastes Like
Red curry has a deeper, earthier character than green - the dried red chillies in the paste produce a fuller, slightly smokier heat. It sits in the medium range: more assertive than yellow or massaman, but the coconut milk keeps things well balanced. The flavour is rich and warming with a substantial broth that works beautifully with jasmine rice.

Red Curry
Deeper and earthier than green, with dried red chilli. Full coconut milk body and a slightly more robust, satisfying heat.
Green Curry
Herbal, fragrant coconut broth. Fresh green chilli gives a brighter, lighter heat. The most internationally famous Thai curry.
Panang Curry
Thick, creamy and intensely flavoured with ground peanuts. Lower sauce volume than red curry, more of a coating on the protein.
Massaman Curry
The mildest on the menu. Rich, nutty and sweet with warm spice from cinnamon and cardamom. Potatoes and roasted peanuts.
Yellow Curry
Gentle and approachable, with turmeric and mild dried spices. A good starting point for anyone new to Thai curries.
Jungle Curry
No coconut milk - the only one without it. Hot, clear broth with fresh herbs and real chilli heat. The boldest on the menu.
